Some people come to gardening through patience. I came through stubbornness.
I’m a Dane living in Denmark, which means I spend roughly six months of the year waiting for things to grow, and the other six months trying to preserve, cook, and remember them. The garden teaches you that most good things take longer than you planned, and taste better than you expected.
By day I work in tech. By every other hour, I’m in the kitchen or out in the garden, usually with dirt under my fingernails and something simmering on the stove.
Wild Bloom North is where those two worlds meet. It’s a place for recipes that come with stories, and garden updates that come with honesty, including the seeds that didn’t make it and the dishes that weren’t quite right the first time.
I cook the way I garden: with a loose plan, a willingness to improvise, and a firm belief that butter makes most things better.
